Most wine lists in northern Tanzania run an entry sparkling and a celebration champagne, with nothing between them. That middle is where guests spend most readily, and where the margin per bottle is highest.

It is dosed to take the ice — 40 g/l on the Blanc, 45 on the Rosé — so it holds its balance as the cubes melt, where champagne on a terrace at 28°C is warm and flat in ten minutes. Sundowners, arrivals, honeymoon welcomes, birthdays on the crater rim: it sells itself as an occasion, not as a bottle.
